  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/2 cup canned pumpkin puree (100% pure)
  • 1 large egg
  • 1 cup mini marshmallows
  • 1/2 cup graham cracker crumbs

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, cream softened butter with granulated and brown sugars until fluffy. Mix in pumpkin puree and egg until well combined.
  4. Gradually add dry ingredients to wet mixture until just combined. Fold in mini marshmallows and graham cracker crumbs gently.
  5. Drop rounded tablespoons of dough onto prepared baking sheets, spacing them two inches apart.
  6. Bake for 12-15 minutes or until edges are golden but centers remain soft. Cool on baking sheet for five minutes before transferring to wire racks.
