  • 1 cup brown sugar (light or dark)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 cup all-purpose flour
  • 3 tbsp white or yellow miso paste
  • 1/2 cup heavy cream
  • 3 cups vanilla ice cream
  • For the Caramel Sauce:
  • 1 cup granulated sugar
  • 1/4 cup water
  • 3 tbsp miso paste
  • 2 tbsp unsalted butter
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  2. In a mixing bowl, beat together softened butter, brown sugar, and granulated sugar until creamy.
  3. Add eggs one at a time, then fold in all-purpose flour until just combined.
  4. Pour batter into the prepared pan and bake for 25-30 minutes until golden brown. Cool completely before cutting into squares.
  5. For the caramel sauce, combine sugar and water in a saucepan over medium heat until dissolved. Boil without stirring until amber-colored.
  6. Remove from heat, then stir in miso paste, heavy cream, salt, and butter until smooth.
  7. To serve, place blondie squares in bowls, scoop vanilla ice cream on top, and drizzle with warm miso caramel sauce.
