  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 12 oz fettuccine or penne pasta
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 4 garlic cloves, minced
  • 2 cups fresh spinach (optional)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients by dicing the chicken and mincing the garlic.
  2. Cook pasta in salted boiling water until al dente. Reserve 1/2 cup of pasta water and drain.
  3. In a skillet over medium-high heat, add olive oil and sauté diced chicken seasoned with salt and pepper until golden brown (6-7 minutes).
  4. Lower heat, add minced garlic and spinach (if using), cooking for about 1 minute.
  5. Pour in heavy cream and gradually stir in Parmesan cheese until melted and combined.
  6. Toss cooked pasta into the sauce, adding reserved pasta water as needed to reach desired creaminess.
