  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1 tsp vanilla extract
  • 1 cup mini peanut butter cups, chopped (plus extra for topping)
  • 1 cup graham cracker crumbs
  • 4 tbsp unsalted butter, melted
  • Optional: 1/2 cup chocolate chips for drizzling

Instructions

  1. Preheat the oven to 325°F (160°C) and line a muffin tin with paper liners.
  2. In a bowl, combine graham cracker crumbs and melted butter until it resembles wet sand. Press about one tablespoon into each muffin liner and bake for 5 minutes.
  3. In another bowl, blend cream cheese and sugar until smooth. Add eggs one at a time, followed by vanilla extract. Gently fold in half of the chopped peanut butter cups.
  4. Pour cheesecake mixture evenly over crusts in muffin tin, leaving some space for rising.
  5. Bake for 18-20 minutes until set but slightly jiggly in the center. Cool before refrigerating for at least two hours or overnight.
  6. Drizzle melted chocolate on top and garnish with remaining mini peanut butter cups before serving.
