  • 2 cups butternut squash, peeled and diced
  • 1 lb gnocchi (store-bought)
  • 1 lb Italian sausage (spicy or mild)
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, freshly grated
  • 6 fresh sage leaves
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Spread the diced butternut squash on a baking sheet, drizzle with olive oil, season with salt and pepper, and roast for 25 minutes until tender.
  2. In a large skillet over medium heat, add the Italian sausage and cook until browned, stirring occasionally.
  3. Add the sage leaves and roasted butternut squash to the skillet. Cook for an additional 5 minutes until fragrant.
  4. Pour in the heavy cream while stirring continuously until heated through and slightly thickened.
  5. Toss in cooked gnocchi and gently mix until well coated in sauce.
  6. Finish by sprinkling freshly grated Parmesan cheese over the top before serving.
