  • 4 boneless, skinless chicken breasts (approximately 680g)
  • 4 cloves fresh garlic, minced
  • 1 lb (450g) peeled baby potatoes
  • 1 cup frozen peas
  • 2 tbsp olive oil
  • 1 cup dry white wine
  • 1 tsp dried oregano
  • 1 cup chicken broth
  • Salt and pepper to taste

Instructions

  1. 1. Preheat your oven to 400°F (200°C).
  2. 2. Spray a baking dish with nonstick cooking spray. Season the chicken breasts with salt and pepper and arrange them in the dish.
  3. 3. In a skillet over medium heat, warm the olive oil and sauté the minced garlic until fragrant.
  4. 4. Add the white wine and oregano to the skillet; simmer for about five minutes until slightly reduced.
  5. 5. Pour the garlic-wine mixture over the chicken in the baking dish, adding baby potatoes around them.
  6. 6. Cover with foil and bake for 30 minutes. Remove foil, add frozen peas, and bake uncovered for an additional 10 minutes until everything is cooked through.
