Beet Risotto is a deliciously creamy Italian dish that marries Arborio rice with the earthy sweetness of roasted beets, resulting in a stunning pink hue.   • 1 cup Arborio rice
  • 2 medium fresh beets (about 300g), roasted and diced
  • 4 cups low-sodium vegetable broth
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. 1. Preheat oven to 400°F (200°C). Wrap cleaned beets in aluminum foil and roast for about an hour until tender. Let cool, peel, and chop into small cubes.
  2. 2. In a large pot over medium heat, add olive oil. Once hot, sauté chopped onion until translucent (about 5 minutes). Add minced garlic and cook for another minute.
  3. 3. Add Arborio rice to the pot and toast for about 2 minutes while stirring continuously.
  4. 4. Gradually add warm vegetable broth one ladle at a time, stirring until each addition is absorbed before adding more.
  5. 5. Once rice is al dente (about 18-20 minutes), fold in roasted beet cubes and grated Parmesan cheese. Season with salt and pepper to taste.
  6. 6. Serve immediately, topped with extra Parmesan if desired.
