  • 1 cup whole milk ricotta cheese
  • Zest of 1 lemon
  • ¼ cup fresh basil, finely chopped
  • 8 thin asparagus spears
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix the ricotta cheese, lemon zest, chopped basil, salt, and pepper until creamy.
  3. Lay each salmon fillet flat. Spread a generous layer of the ricotta mixture over each piece.
  4. Place 1-2 asparagus spears at one end of each fillet and roll tightly.
  5. Secure rolls with toothpicks if needed. Place them in a greased baking dish and drizzle with olive oil.
  6. Bake for 20-25 minutes until the salmon is opaque and flakes easily with a fork.
