Ingredients
  

For the Chili Base
  • 1 lb ground beef Use lean ground beef for less grease.
  • 1 medium onion Finely diced.
  • 2 cloves garlic Minced.
  • 1 can diced tomatoes 14.5 oz can, with juices.
  • 1 can kidney beans 15 oz can, drained and rinsed.
  • 1 can chili beans 15 oz can, in sauce.
  • 1 cup beef broth Low sodium preferred.
For the Spices
  • 2 tbsp chili powder Adjust to taste.
  • 1 tbsp cumin Ground.
  • 1 tsp smoked paprika For a smoky flavor.
  • 1 tsp salt Adjust to taste.
  • 1/2 tsp black pepper Freshly ground.
  • 1 tsp sugar To balance acidity.
For Serving
  • 4 hot dogs your choice Grilled or boiled.
  • 4 buns hot dog buns Toasted if desired.
  • 1 cup shredded cheddar cheese For topping.
  • 1/4 cup sour cream Optional, for garnish.

Method
 

Prepare the Chili
  1. In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes. This step is important to develop flavor.
  2. Add the diced onion and minced garlic to the skillet. Sauté for an additional 3-4 minutes until the onion is translucent. This enhances the sweetness of the onion and infuses the garlic flavor.
  3. Stir in the diced tomatoes, kidney beans, chili beans, and beef broth. Mix well to combine all ingredients.
  4. Add the chili powder, cumin, smoked paprika, salt, black pepper, and sugar. Stir until the spices are evenly distributed throughout the mixture.
  5. Bring the chili to a simmer. Reduce the heat to low and let it cook uncovered for 20-25 minutes, stirring occasionally. This allows the flavors to meld and the chili to thicken.
Serve the Chili
  1. While the chili simmers, prepare your hot dogs according to your preference (grilled or boiled).
  2. Once the chili is ready, place a hot dog in each bun and generously spoon the hot dog chili over the top.
  3. Top with shredded cheddar cheese and a dollop of sour cream if desired. Serve immediately for the best flavor.

Notes

This chili can be made ahead of time and stored in the refrigerator for up to 3 days. It also freezes well for up to 3 months. Reheat on the stove over medium heat until warmed through.
