Prepare the Salad Ingredients
  1. Start by cutting the watermelon into bite-sized cubes. Use a sharp knife to slice through the flesh, ensuring you remove any seeds if present. This will provide a sweet and juicy base for the salad.
  2. Next, wash the cucumber thoroughly. If using an English cucumber, you can leave the skin on for added texture and nutrients. Dice the cucumber into small pieces, similar in size to the watermelon cubes.
  3. Finely dice the red onion. This will add a sharp flavor that complements the sweetness of the watermelon and the freshness of the cucumber.
  4. Chop the fresh mint leaves. This herb will bring a refreshing aroma and flavor to the salad.
Make the Dressing
  1. In a small mixing bowl, combine the olive oil, freshly squeezed lime juice, honey (if using), salt, and black pepper. Whisk together until the mixture is well combined and emulsified. This dressing will enhance the flavors of the salad.
