Ingredients
  

For the Meat Mixture
  • 1 lb ground beef Use lean ground beef for less grease.
  • 1 small onion Finely chopped.
  • 2 cloves garlic Minced.
  • 1 packet taco seasoning Store-bought or homemade.
  • 1 cup black beans Rinsed and drained.
  • 1 cup corn Frozen or canned, drained.
  • 1 cup salsa Choose your preferred heat level.
For the Casserole
  • 6 small corn tortillas Cut into quarters.
  • 2 cups shredded cheese Cheddar, Monterey Jack, or a blend.
  • 1 cup sour cream For topping.
  • 1 cup chopped green onions For garnish.
  • 1 medium avocado Diced, for topping.

Method
 

Prepare the Meat Mixture
  1. In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  2. Add the chopped onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3-4 minutes.
  3. Stir in the taco seasoning, black beans, corn, and salsa. Cook for an additional 5 minutes, allowing the flavors to meld.
Assemble the Casserole
  1. Preheat your oven to 350°F (175°C).
  2. In a 9x13 inch baking dish, spread a thin layer of the meat mixture on the bottom.
  3. Layer half of the tortilla quarters over the meat mixture, followed by half of the shredded cheese.
  4. Repeat the layers with the remaining meat mixture, tortilla quarters, and top with the remaining cheese.
Bake the Casserole
  1. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
  2. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
Serve
  1. Remove from the oven and let it cool for 5 minutes before serving.
  2. Top with sour cream, diced avocado, and chopped green onions before serving.
