Method
Prepare the Meat Mixture
- In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.
- Add the chopped onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3-4 minutes.
- Stir in the taco seasoning, black beans, corn, and salsa. Cook for an additional 5 minutes, allowing the flavors to meld.
Assemble the Casserole
- Preheat your oven to 350°F (175°C).
- In a 9x13 inch baking dish, spread a thin layer of the meat mixture on the bottom.
- Layer half of the tortilla quarters over the meat mixture, followed by half of the shredded cheese.
- Repeat the layers with the remaining meat mixture, tortilla quarters, and top with the remaining cheese.
Bake the Casserole
- Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
Serve
- Remove from the oven and let it cool for 5 minutes before serving.
- Top with sour cream, diced avocado, and chopped green onions before serving.
