Ingredients

Salad Base
  • 2 cups shredded green cabbage finely shredded for better texture
  • 1 cup carrots julienned or grated
  • 1 cup cucumber thinly sliced
  • 1 cup red bell pepper thinly sliced
  • 1 cup fresh cilantro roughly chopped
  • 1 cup fresh mint leaves roughly chopped
  • 1 cup sliced green onions both white and green parts
Peanut Dressing
  • 3 tablespoons peanut butter smooth or crunchy, as preferred
  • 2 tablespoons soy sauce use low-sodium for a healthier option
  • 1 tablespoon rice vinegar adds tanginess
  • 1 tablespoon honey or maple syrup for a vegan option
  • 1 teaspoon sesame oil for added flavor
  • 1 clove garlic minced
  • 2 tablespoons water to thin the dressing

Method

Prepare the Salad
  1. In a large mixing bowl, combine the shredded cabbage, julienned carrots, sliced cucumber, red bell pepper, chopped cilantro, mint leaves, and sliced green onions. Toss gently to mix the ingredients evenly.
  2. Make sure to use fresh vegetables for the best flavor and crunch. The combination of colors will make your salad visually appealing.
Make the Peanut Dressing
  1. In a separate bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, sesame oil, and minced garlic until smooth.
  2. If the dressing is too thick, gradually add water, one tablespoon at a time, until you reach your desired consistency. This dressing should be creamy yet pourable.
Combine and Serve
  1. Drizzle the peanut dressing over the salad just before serving. Toss gently to coat all the ingredients evenly.
  2. Serve immediately on a large platter or individual bowls. This salad is best enjoyed fresh to maintain the crispness of the vegetables.
