Ingredients

Main Ingredients
  • 4 medium Zucchini Cut into 1/2-inch thick rounds
  • 4 cloves Garlic Minced
  • 3 tablespoons Olive Oil Extra virgin for best flavor
  • 1 teaspoon Dried Oregano Or use fresh if available
  • 1 teaspoon Salt Adjust to taste
  • 1/2 teaspoon Black Pepper Freshly ground for better flavor
  • 1 tablespoon Fresh Parsley Chopped, for garnish

Method

Prepare the Zucchini
  1. Preheat your oven to 425°F (220°C). This high temperature will help achieve a nice caramelization on the zucchini.
  2. Wash the zucchini thoroughly under cold water to remove any dirt. Pat them dry with a clean towel.
  3. Using a sharp knife, cut the zucchini into 1/2-inch thick rounds. This size allows for even cooking and ensures they roast nicely.
Mix Ingredients
  1. In a large mixing bowl, combine the sliced zucchini, minced garlic, olive oil, dried oregano, salt, and black pepper. Toss everything together until the zucchini is evenly coated with the oil and seasonings.
Roast the Zucchini
  1. Spread the zucchini mixture in a single layer on a baking sheet. Make sure the pieces are not overcrowded; this helps them roast rather than steam.
  2. Place the baking sheet in the preheated oven and roast for 20-25 minutes, or until the zucchini is tender and golden brown, stirring halfway through to ensure even cooking.
Serve
  1. Once roasted, remove the zucchini from the oven and transfer it to a serving dish.
  2. Garnish with chopped fresh parsley for a pop of color and added flavor. Serve warm as a delightful side dish.
