Ingredients

For the Pumpkin Cobbler Batter

  • 1 cup plus 3 tablespoons (140 g) all-purpose flour spooned and leveled
  • 2 teaspoons (8 g) baking powder
  • 1/2 teaspoon (3 g) fine salt
  • 3/4 cup (150 g) granulated sugar
  • 1 teaspoon (2.5 g) ground cinnamon
  • 1/2 teaspoon (1 g) ground nutmeg
  • 1/2 teaspoon (1 g) ground cloves
  • 1/2 cup (120 g) pure pumpkin puree canned or homemade and well-drained
  • 1/4 cup (60 ml) whole milk room temperature
  • 1/4 cup (57 g) unsalted butter melted and slightly cooled
  • 1 1/2 teaspoons (7.5 ml) pure vanilla extract

For the Pecan Caramel Topping

  • 1/2 cup (100 g) granulated sugar
  • 1/2 cup (110 g) packed light brown sugar
  • 1/4 cup (30 g) pecans roughly chopped
  • 1 1/2 cups (355 ml) very hot water

Instructions

Method

  • Position an oven rack in the center and preheat to 350°F (175°C) for approximately 10–15 minutes. Set the 8-inch square baking dish on the rimmed baking sheet to catch any bubbling sauce. Leave the baking dish ungreased; the melted butter in the batter supplies richness, and the cobbler will be spooned rather than sliced.
  • In a medium mixing bowl, whisk together the all-purpose flour, baking powder, salt, 3/4 cup granulated sugar, cinnamon, nutmeg, and cloves for 30–45 seconds. Continue until the spices are distributed evenly and no visible lumps of baking powder remain, ensuring a consistent rise during baking.
  • In the second medium bowl, combine the pumpkin puree, room-temperature milk, melted butter, and vanilla extract. Whisk for approximately 1 minute until the mixture looks smooth, thick, and evenly orange. Make sure the butter is warm rather than hot to keep the mixture uniform.
  • Pour the pumpkin mixture into the dry ingredients and fold gently with a spatula for approximately 30–60 seconds, stopping when no dry flour remains. The batter should be thick, moist, and spreadable. Avoid prolonged mixing because excess gluten development can produce a tough cake.
  • Transfer the pumpkin batter into the ungreased 8-inch square baking dish. Use the spatula to spread it evenly into the corners, creating a level surface approximately 3/4 inch (2 cm) deep. An even layer helps the center and edges bake at a similar rate.
  • In the small mixing bowl, stir together 1/2 cup granulated sugar, the packed light brown sugar, and chopped pecans for approximately 30 seconds. Sprinkle the mixture evenly over the pumpkin batter, covering the surface without pressing it down. The sugar will dissolve during baking while the pecans remain near the top.
  • Heat the measured water separately until very hot, close to boiling, approximately 200–212°F (93–100°C). Slowly pour all 1 1/2 cups (355 ml) over the sugar and pecan layer, distributing it across the surface. Do not stir or disturb the layers; separation allows the cake to rise while the sauce develops below.
  • Carefully transfer the baking sheet and cobbler to the center oven rack. Bake at 350°F (175°C) for approximately 35–45 minutes, checking at 35 minutes. The cake surface should look set and lightly golden, with bubbling caramel sauce visible near the edges. A toothpick inserted into the cake portion should come out without raw batter, although the sauce underneath will remain liquid.
  • Remove the baking dish from the oven and place it on a wire cooling rack for 10 minutes. During this rest, the bubbling slows and the sauce thickens slightly as it cools. Spoon portions into serving bowls, reaching beneath the cake to include the warm caramel sauce.
