Ingredients
  

For the Pasta
  • 12 oz Pasta (spaghetti or linguine) Use your favorite type of pasta.
For the Pesto Sauce
  • 2 cups Fresh Basil Leaves Packed tightly, stems removed.
  • 1/2 cup Pine Nuts Lightly toasted for enhanced flavor.
  • 1/2 cup Parmesan Cheese Grated, for a rich flavor.
  • 2 cloves Garlic Peeled.
  • 1/2 cup Extra Virgin Olive Oil High-quality for best flavor.
  • 1/2 teaspoon Salt Adjust to taste.
  • 1/4 teaspoon Black Pepper Freshly ground.

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Use about 1 tablespoon of salt for every 4 quarts of water to enhance the pasta's flavor.
  2. Add the pasta to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.
  3. Once cooked, reserve 1 cup of pasta water and then drain the pasta in a colander.
Prepare the Pesto Sauce
  1. In a food processor, combine the basil leaves, pine nuts, grated Parmesan cheese, and garlic cloves.
  2. Pulse the mixture until finely chopped, scraping down the sides of the bowl as needed to ensure even mixing.
  3. With the food processor running, slowly drizzle in the olive oil until the mixture is smooth and creamy. This emulsifies the oil with the other ingredients, creating a cohesive sauce.
  4. Season the pesto with salt and black pepper to taste.
Combine Pasta and Pesto
  1. In a large mixing bowl, combine the drained pasta with the pesto sauce. Toss well to coat the pasta evenly.
  2. If the sauce is too thick, add reserved pasta water a little at a time until you reach your desired consistency.
  3. Serve immediately, garnished with extra Parmesan cheese and a sprinkle of pine nuts, if desired.
