  • 1/4 cup fresh mint leaves Chop roughly for better distribution.
  • 1 medium cucumber Peeled and diced.
For the Dressing
  • 3 tablespoons extra virgin olive oil Quality oil enhances the flavor.
  • 2 tablespoons fresh lime juice Freshly squeezed for the best taste.
  • 1 teaspoon honey Adjust to taste for sweetness.
  • 1/4 teaspoon salt Adjust based on feta's saltiness.
  • 1/4 teaspoon black pepper Freshly ground for best flavor.

Method
 

Prepare the Salad
  1. Start by cutting the melon into bite-sized cubes. Use a sharp knife for clean cuts and to avoid bruising the fruit.
  2. Next, peel and dice the cucumber into small pieces. This adds crunch and freshness to the salad.
  3. In a large mixing bowl, combine the cubed melon, diced cucumber, crumbled feta cheese, and chopped mint leaves. Gently toss to mix without breaking the feta.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, fresh lime juice, honey, salt, and black pepper until well combined. This dressing will enhance the flavors of the salad.
Combine and Serve
  1. Drizzle the dressing over the salad mixture in the large bowl. Toss gently to ensure all ingredients are coated with the dressing.
  2. Transfer the salad to a serving platter. Optionally, garnish with additional mint leaves for presentation.
