Ingredients
  

For the Sandwich
  • 8 slices Italian bread Use ciabatta or focaccia for best results.
  • 1 cup salami Finely chopped.
  • 1 cup capicola Finely chopped.
  • 1 cup provolone cheese Finely chopped or shredded.
  • 1 cup romaine lettuce Shredded.
  • 1 cup cherry tomatoes Halved.
  • 1/2 cup pepperoncini Sliced.
For the Dressing
  • 1/4 cup olive oil Extra virgin for best flavor.
  • 2 tablespoons red wine vinegar Adjust to taste.
  • 1 teaspoon dried oregano For an authentic Italian flavor.
  • 1 teaspoon garlic powder Or use fresh minced garlic.
  • 1/2 teaspoon salt Adjust to taste.
  • 1/4 teaspoon black pepper Freshly ground for better flavor.

Method
 

Prepare the Dressing
  1. In a mixing bowl, combine the olive oil, red wine vinegar, dried oregano, garlic powder, salt, and black pepper.
  2. Whisk the ingredients together until well combined. This dressing will add flavor and moisture to the sandwich.
Assemble the Sandwich
  1. Take the Italian bread slices and lay them out on a clean cutting board.
  2. On half of the slices, layer the chopped salami, capicola, provolone cheese, shredded romaine lettuce, halved cherry tomatoes, and sliced pepperoncini.
  3. Drizzle the prepared dressing generously over the layered ingredients.
  4. Top with the remaining slices of bread to create sandwiches.
Serve
  1. If desired, use a sandwich press or grill to toast the sandwiches until golden brown and the cheese is melted.
  2. Cut each sandwich in half and serve immediately, or wrap in parchment paper for a picnic.
