Prepare the Dressing
- In a mixing bowl, combine the olive oil, red wine vinegar, dried oregano, garlic powder, salt, and black pepper.
- Whisk the ingredients together until well combined. This dressing will add flavor and moisture to the sandwich.
Assemble the Sandwich
- Take the Italian bread slices and lay them out on a clean cutting board.
- On half of the slices, layer the chopped salami, capicola, provolone cheese, shredded romaine lettuce, halved cherry tomatoes, and sliced pepperoncini.
- Drizzle the prepared dressing generously over the layered ingredients.
- Top with the remaining slices of bread to create sandwiches.
Serve
- If desired, use a sandwich press or grill to toast the sandwiches until golden brown and the cheese is melted.
