Ingredients

For the Sandwich Filling
  • 4 oz Genoa salami finely chopped
  • 4 oz Capicola finely chopped
  • 4 oz Provolone cheese finely chopped
  • 1 cup Romaine lettuce shredded
  • 1 cup Cherry tomatoes halved
  • 1/2 cup Red onion finely diced
  • 1/2 cup Pepperoncini peppers sliced
For the Vinaigrette
  • 1/4 cup Red wine vinegar or balsamic vinegar
  • 1/2 cup Extra virgin olive oil high quality
  • 1 tbsp Dijon mustard
  • 1 clove Garlic minced
  • 1 tsp Dried oregano
For the Bread
  • 1 loaf Italian bread or ciabatta, sliced

Method

Prepare the Vinaigrette
  1. In a bowl, whisk together the red wine vinegar, Dijon mustard, minced garlic, and dried oregano. This will create a flavorful base for the vinaigrette.
  2. Slowly drizzle in the extra virgin olive oil while whisking continuously until the mixture is emulsified. This ensures that the oil and vinegar combine well, creating a smooth dressing.
  3. Season with salt and pepper to taste. Adjust the acidity by adding more vinegar if desired.
Prepare the Sandwich Filling
  1. In a large mixing bowl, combine the chopped Genoa salami, capicola, provolone cheese, shredded romaine lettuce, halved cherry tomatoes, diced red onion, and sliced pepperoncini peppers. This mixture will provide a burst of flavors and textures.
  2. Pour the vinaigrette over the filling and toss gently to combine. Make sure all ingredients are evenly coated with the dressing, enhancing the overall flavor of the sandwich.
Assemble the Sandwich
  1. Slice the Italian bread or ciabatta horizontally. If desired, lightly toast the bread for added texture.
  2. Spoon the filling mixture generously onto the bottom half of the bread. Ensure an even distribution for balanced bites.
  3. Top with the other half of the bread and press down gently. This helps to compact the sandwich, making it easier to slice and serve.
  4. Cut the sandwich into individual portions and serve immediately. Enjoy the fresh, vibrant flavors of your Italian chopped sandwich!
