  • 3 tablespoons olive oil extra virgin for best flavor
  • 2 tablespoons white wine vinegar or apple cider vinegar
  • 1 teaspoon honey to balance acidity

Method
 

Prepare the Vegetables
  1. Start by washing the cucumbers and cherry tomatoes under cold water. This removes any dirt or pesticides.
  2. Peel the cucumbers using a vegetable peeler if desired, then slice them thinly using a sharp knife. Aim for about 1/8-inch thick slices for the best texture.
  3. Thinly slice the red onion. If the flavor is too strong for your taste, soak the slices in cold water for 10 minutes to mellow the flavor.
  4. If using, halve the cherry tomatoes and set aside.
Make the Dressing
  1. In a mixing bowl, combine the olive oil, white wine vinegar, honey, salt, black pepper, and minced garlic.
  2. Whisk the ingredients together until the dressing is well combined and emulsified. This ensures that the oil and vinegar blend properly, creating a smooth dressing.
Combine and Serve
  1. In a large mixing bowl, combine the sliced cucumbers, red onion, and cherry tomatoes.
  2. Pour the dressing over the vegetables and toss gently to coat everything evenly. Be careful not to bruise the vegetables.
  3. Let the salad sit for about 5-10 minutes before serving. This allows the flavors to meld together.
  4. Garnish with chopped parsley before serving for a fresh touch.

Notes
