Ingredients

For the Dip Base
  • 2 cups sweet corn fresh, frozen, or canned (drained)
  • 1 cup cream cheese softened to room temperature
  • 1 cup sour cream full-fat for creaminess
  • 1 cup shredded cheddar cheese sharp or mild based on preference
  • 1 cup jalapeños fresh, diced (remove seeds for less heat)
For the Seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1 teaspoon salt adjust to taste
  • 1/2 teaspoon black pepper freshly ground
For Garnish
  • 1/4 cup fresh cilantro chopped, optional
  • 1/4 cup green onions sliced, optional

Method

Prepare the Dip Base
  1. In a large mixing bowl, combine the softened cream cheese, sour cream, and shredded cheddar cheese. Use a spatula to mix until smooth and creamy. This ensures that the dip has a consistent texture.
  2. Add the sweet corn and diced jalapeños to the cheese mixture. Stir gently to combine, being careful not to break the corn kernels.
Season the Dip
  1. Sprinkle the garlic powder, onion powder, cumin, salt, and black pepper over the corn mixture. Stir well to ensure the spices are evenly distributed throughout the dip.
Bake the Dip
  1. Preheat your oven to 350°F (175°C). This temperature allows the dip to heat through and the cheese to melt without burning.
  2. Transfer the dip mixture into a baking dish, spreading it out evenly. This helps it cook uniformly.
  3. Bake in the preheated oven for 25-30 minutes, or until the dip is bubbly and lightly golden on top. This step enhances the flavors and creates a delicious crust.
Garnish and Serve
  1. Remove the dip from the oven and let it cool for a few minutes. This prevents burns from hot cheese.
  2. Garnish with chopped cilantro and sliced green onions if desired. Serve warm with tortilla chips, crackers, or fresh vegetables.
