Ingredients

Main Ingredients
  • 4 medium ripe bananas peeled and sliced
  • 1 cup coconut milk full-fat for creaminess
  • 1 teaspoon vanilla extract pure vanilla extract preferred
  • 2 tablespoons honey or maple syrup adjust based on sweetness preference
  • 1/4 teaspoon salt to enhance flavor

Method

Prepare the Bananas
  1. Peel and slice the ripe bananas into small pieces. Ripe bananas are essential as they provide natural sweetness and a creamy texture.
Blend the Ingredients
  1. In a blender or food processor, combine the sliced bananas, coconut milk, vanilla extract, honey or maple syrup, and salt.
  2. Blend until smooth and creamy. Scrape down the sides as needed to ensure everything is well combined.
Chill the Mixture
  1. Transfer the banana mixture to a freezer-safe container. Cover it tightly with a lid or plastic wrap.
  2. Place the container in the freezer for about 2 hours to chill and firm up slightly.
Churn the Ice Cream (Optional)
  1. If using an ice cream maker, pour the chilled banana mixture into the ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
  2. If you do not have an ice cream maker, you can skip this step and simply freeze the mixture.
Final Freeze
  1. Transfer the churned ice cream (or the mixture if not using an ice cream maker) back into the freezer-safe container.
  2. Freeze for an additional 2-4 hours, or until firm enough to scoop.
Serve
  1. Scoop the banana ice cream into bowls and enjoy! You can top it with sliced bananas, nuts, or chocolate chips for added flavor.

Notes

For a creamier texture, use an ice cream maker. If you prefer a vegan option, ensure that the sweetener is plant-based. This ice cream can be stored in the freezer for up to 2 weeks, but it's best enjoyed fresh.
