Ingredients
  

For the Meatloaf
  • 1 lb ground beef preferably 80% lean
  • 1 cup bread crumbs plain or Italian seasoned
  • 1 large egg room temperature
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tbsp Worcestershire sauce
  • 1 tbsp ketchup
  • 1 tbsp mustard yellow or Dijon
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
For the Glaze
  • 1/4 cup ketchup
  • 2 tbsp brown sugar packed
  • 1 tbsp apple cider vinegar

Method
 

Prepare the Meatloaf Mixture
  1. Preheat your oven to 350°F (175°C). This ensures that the meatloaf cooks evenly.
  2. In a large mixing bowl, combine the ground beef, bread crumbs, egg, chopped onion, minced garlic, Worcestershire sauce, ketchup, mustard, salt, black pepper, and dried thyme.
  3. Using your hands or a mixing spoon, gently mix the ingredients until just combined. Avoid overmixing to keep the meatloaf tender.
Shape and Bake the Meatloaf
  1. Transfer the meat mixture into a loaf pan, pressing it down gently to form an even shape.
  2. Place the loaf pan on a baking sheet to catch any drippings during baking.
  3. Bake in the preheated oven for 45 minutes.
Prepare the Glaze
  1. While the meatloaf is baking, prepare the glaze by mixing together the ketchup, brown sugar, and apple cider vinegar in a small bowl.
  2. Stir until the sugar is dissolved and the mixture is smooth.
Glaze and Finish Baking
  1. After 45 minutes, remove the meatloaf from the oven and spread the glaze evenly over the top.
  2. Return the meatloaf to the oven and bake for an additional 15 minutes, or until the internal temperature reaches 160°F (71°C) when checked with a meat thermometer.
Rest and Serve
  1. Once cooked, remove the meatloaf from the oven and let it rest for 10 minutes before slicing. This helps retain the juices.
  2. Slice and serve warm, optionally with mashed potatoes and steamed vegetables.

Notes
