Ingredients
  

For the Chicken Salad
  • 2 cups cooked chicken breast, shredded Use rotisserie chicken for convenience.
  • 1 cup seedless grapes, halved Red or green grapes can be used.
  • 1 cup celery, diced About 2-3 stalks.
  • 1/2 cup red onion, finely diced Adjust to taste.
  • 1/2 cup mayonnaise Use light mayonnaise for a healthier option.
  • 1 tablespoon Dijon mustard Adds a tangy flavor.
  • 1 tablespoon lemon juice Freshly squeezed is best.
  • 1/4 teaspoon salt Adjust to taste.
  • 1/4 teaspoon black pepper Freshly ground for best flavor.
  • 1/4 cup chopped walnuts or pecans Optional for added crunch.

Method
 

Prepare the Ingredients
  1. Shred the cooked chicken breast into bite-sized pieces and place it in a large mixing bowl.
  2. Halve the grapes and add them to the bowl with the chicken.
  3. Dice the celery and finely chop the red onion, then add both to the mixing bowl.
  4. If using, chop the walnuts or pecans and add them to the mixture.
Make the Dressing
  1. In a separate small bowl, combine the mayonnaise, Dijon mustard, lemon juice, salt, and black pepper.
  2. Whisk the dressing until smooth and well combined. This will ensure that the flavors meld together.
Combine and Serve
  1. Pour the dressing over the chicken and grape mixture in the large bowl.
  2. Gently fold the ingredients together using a spoon until everything is evenly coated with the dressing.
  3. Taste and adjust seasoning if necessary, adding more salt or pepper as desired.
  4. Serve immediately on a bed of greens, in a sandwich, or in a wrap.
