Ingredients
  

For the Chicken Salad
  • 2 cups cooked chicken breast shredded or diced
  • 1 cup cabbage finely shredded
  • 1 cup carrots julienned or grated
  • 1/2 cup cucumber julienned
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup green onions sliced
  • 1 tablespoon soy sauce low sodium preferred
  • 1 tablespoon sesame oil for flavor
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon sugar to balance flavors
For the Spring Rolls
  • 8 pieces rice paper wrappers 8-inch diameter
  • 1 cup lettuce leaves whole leaves, for wrapping
For the Dipping Sauce
  • 2 tablespoons hoisin sauce for sweetness
  • 1 tablespoon peanut butter smooth
  • 1 tablespoon water to thin the sauce
  • 1 teaspoon lime juice freshly squeezed
  • 1 teaspoon chili sauce optional, for heat

Method
 

Prepare the Chicken Salad
  1. In a large mixing bowl, combine the shredded chicken, cabbage, carrots, cucumber, cilantro, and green onions. This mixture will provide a fresh and crunchy texture.
  2. In a small bowl, whisk together the soy sauce, sesame oil, lime juice, and sugar until the sugar is dissolved. This dressing will enhance the flavors of the salad.
  3. Pour the dressing over the chicken salad mixture and toss until everything is well coated. This ensures that every bite is flavorful.
Assemble the Spring Rolls
  1. Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it becomes pliable, but not too soft.
  2. Lay the softened rice paper wrapper on a clean cutting board. Place a lettuce leaf in the center of the wrapper, followed by a generous amount of the chicken salad mixture.
  3. Fold the sides of the rice paper over the filling, then roll it up tightly from the bottom to the top, similar to rolling a burrito. This helps to secure the filling inside.
  4. Repeat the process with the remaining rice paper wrappers and filling. Keep the finished rolls covered with a damp cloth to prevent them from drying out.
Prepare the Dipping Sauce
  1. In a small bowl, mix together the hoisin sauce, peanut butter, water, lime juice, and chili sauce (if using). Stir until smooth. This sauce will add a creamy and tangy flavor to the rolls.
Serve
