Ingredients
  

For the Chicken Salad
  • 2 cups cooked chicken breast shredded or diced
  • 1 cup cabbage finely shredded
  • 1 cup carrots julienned or grated
  • 1 cup cucumber thinly sliced
  • 1/2 cup fresh cilantro chopped
  • 1/4 cup green onions sliced
  • 1 tablespoon lime juice freshly squeezed
  • 1 tablespoon soy sauce low sodium recommended
  • 1 teaspoon sesame oil for flavor
For the Spring Rolls
  • 8 pieces rice paper wrappers 8-inch diameter
For the Dipping Sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon peanut butter smooth
  • 1 teaspoon water to thin the sauce
  • 1 teaspoon lime juice freshly squeezed
  • 1 teaspoon chili sauce optional for heat

Method
 

Prepare the Chicken Salad
  1. In a large mixing bowl, combine the shredded chicken, cabbage, carrots, cucumber, cilantro, and green onions. This mixture will be the filling for your spring rolls.
  2. Add lime juice, soy sauce, and sesame oil to the bowl. Toss everything together until well combined. This adds flavor and moisture to the chicken salad.
  3. Taste and adjust seasoning if necessary. Set aside.
Assemble the Spring Rolls
  1. Fill a large skillet with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds, or until it becomes soft and pliable. Be careful not to soak it too long, as it can tear.
  2. Lay the softened wrapper flat on a clean cutting board. Place about 1/4 cup of the chicken salad mixture in the center of the wrapper.
  3. Fold the sides of the wrapper over the filling, then roll it up tightly from the bottom to the top. Ensure the filling is secure inside. Repeat with the remaining wrappers and filling.
Make the Dipping Sauce
  1. In a small bowl, combine hoisin sauce, peanut butter, water, lime juice, and chili sauce if using. Mix until smooth. This sauce adds a rich and tangy flavor to complement the fresh spring rolls.
Serve

Notes
