Ingredients
  

For the Fritters
  • 2 cups all-purpose flour sifted
  • 1 tablespoon baking powder ensure it's fresh
  • 1 teaspoon ground cinnamon for flavor
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar plus more for coating
  • 1/2 cup milk room temperature
  • 1/4 cup unsalted butter melted
  • 1 large egg room temperature
  • 1 teaspoon vanilla extract
  • 2 medium apples peeled, cored, and finely diced
For the Glaze
  • 1 cup powdered sugar sifted
  • 2 tablespoons milk adjust for consistency
  • 1/2 teaspoon vanilla extract

Method
 

Prepare the Fritters
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. This prevents sticking and makes cleanup easier.
  2. In a large mixing bowl, whisk together the flour, baking powder, cinnamon, salt, and granulated sugar until well combined. This ensures even distribution of the dry ingredients.
  3. In another bowl, mix the milk, melted butter, egg, and vanilla extract. Whisk until smooth. This mixture adds moisture and flavor to the fritters.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix, as this can make the fritters tough.
  5. Gently fold in the diced apples until evenly distributed throughout the batter.
  6. Using a spoon or cookie scoop, drop heaping tablespoons of the batter onto the prepared baking sheet, leaving space between each fritter.
  7. Bake in the preheated oven for 20-25 minutes, or until the fritters are golden brown and a toothpick inserted into the center comes out clean.
  8. Once baked, remove from the oven and let cool on a wire rack.
Prepare the Glaze
  1. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Adjust the milk as needed to achieve your desired glaze consistency.
  2. Once the fritters have cooled slightly, drizzle the glaze over the top of each fritter. Allow the glaze to set for a few minutes before serving.

Notes

These fritters are best served warm, but can be stored in an airtight container for up to 3 days. Reheat in the oven for a few minutes to regain their softness.
