Prepare the Fritters
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. This prevents sticking and makes cleanup easier.
- In a large mixing bowl, whisk together the flour, baking powder, cinnamon, salt, and granulated sugar until well combined. This ensures even distribution of the dry ingredients.
- In another bowl, mix the milk, melted butter, egg, and vanilla extract. Whisk until smooth. This mixture adds moisture and flavor to the fritters.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix, as this can make the fritters tough.
- Gently fold in the diced apples until evenly distributed throughout the batter.
- Using a spoon or cookie scoop, drop heaping tablespoons of the batter onto the prepared baking sheet, leaving space between each fritter.
- Bake in the preheated oven for 20-25 minutes, or until the fritters are golden brown and a toothpick inserted into the center comes out clean.
- Once baked, remove from the oven and let cool on a wire rack.
Prepare the Glaze
- In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Adjust the milk as needed to achieve your desired glaze consistency.
- Once the fritters have cooled slightly, drizzle the glaze over the top of each fritter. Allow the glaze to set for a few minutes before serving.

Notes
These fritters are best served warm, but can be stored in an airtight container for up to 3 days. Reheat in the oven for a few minutes to regain their softness.
