Ingredients

Zucchini Preparation
  • 2 medium zucchini sliced into 1/4 inch rounds
  • 2 tablespoons olive oil extra virgin for best flavor
  • 1 teaspoon garlic powder for seasoning
  • 1 teaspoon Italian seasoning or your favorite herb blend
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper freshly ground for best flavor

Method

Prepare the Zucchini
  1. Wash the zucchini thoroughly under cold water to remove any dirt or pesticides. Pat dry with a clean towel.
  2. Using a sharp knife, slice the zucchini into 1/4 inch rounds. This thickness ensures even cooking and a crispy texture.
  3. In a mixing bowl, combine the sliced zucchini with olive oil, garlic powder, Italian seasoning, salt, and black pepper. Toss until the zucchini is evenly coated. This step is crucial as the oil helps the seasonings stick and promotes crispiness during cooking.
Air Fry the Zucchini
  1. Preheat your air fryer to 400°F (200°C) for about 5 minutes. Preheating ensures that the zucchini starts cooking immediately, resulting in a better texture.
  2. Place the seasoned zucchini rounds in the air fryer basket in a single layer. Avoid overcrowding to allow hot air to circulate, which is essential for achieving a crispy finish.
  3. Cook the zucchini at 400°F (200°C) for 10-15 minutes, shaking the basket halfway through to promote even cooking. The zucchini is done when it is golden brown and crispy on the edges.
  4. Once cooked, remove the zucchini from the air fryer and let it cool slightly before serving. This allows the zucchini to firm up a bit more, enhancing the crunch.
