  • 4 medium sweet potatoes (about 2 lbs)
  • 1 lb lean ground turkey
  • 1 packet taco seasoning (1 oz)
  • ½ cup sour cream or Greek yogurt
  • 2 cups shredded lettuce
  • 1 cup shredded cheddar cheese
  • 2 tbsp olive oil
  • Optional: salsa, avocado, jalapeños

Instructions

  1. Preheat the oven to 400°F (200°C). Scrub sweet potatoes, dry them, and pierce several times with a fork.
  2. Place potatoes directly on the oven rack. Bake for 45-60 minutes until tender and easily pierced with a fork.
  3. In a skillet over medium heat, add olive oil, then ground turkey. Cook for about 5-7 minutes until browned.
  4. Stir in taco seasoning and ¼ cup water; let simmer for about 3-4 minutes until thickened.
  5. Once sweet potatoes are baked, slice them open lengthwise and fluff the insides with a fork. Spoon in the turkey mixture.
  6. Top with shredded cheese, lettuce, and a dollop of sour cream or your favorite toppings.
