  • 8 oz mascarpone cheese
  • ½ cup strong brewed coffee
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease a baking pan or line it with parchment paper.
  2. In a bowl, mix cocoa powder and sugar until well combined.
  3. Stir in melted butter, eggs, and vanilla until smooth.
  4. Gently fold in flour until just incorporated.
  5. In another bowl, whisk mascarpone cheese with brewed coffee until creamy.
  6. Layer half of the brownie batter into the pan, add the mascarpone mixture, then top with remaining brownie batter.
  7. Bake for 25-30 minutes or until a toothpick comes out with moist crumbs.
