  • 3 cups bell peppers (chopped, mixed colors)
  • 1 lb ground beef or turkey
  • 1 cup cooked rice (white or brown)
  • 1 can (15 oz) diced tomatoes (fire-roasted recommended)
  • 1 medium onion (chopped)
  • 1 cup shredded cheddar or mozzarella cheese
  • 2 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp Italian herbs
  • 1 cup low-sodium chicken or vegetable broth

Instructions

  1. Preheat your oven to 375°F (190°C). Chop the bell peppers into bite-sized pieces. Sauté onions in a pan over medium heat until translucent.
  2. In a large skillet, brown the ground meat for about 5–7 minutes while breaking it apart with a spatula.
  3. Stir in cooked rice, diced tomatoes, and spices. Let the mixture simmer for 5 minutes.
  4. In a greased baking dish, layer half of the meat mixture followed by half of the peppers. Repeat layers until all ingredients are used.
  5. Sprinkle shredded cheese on top and cover with foil. Bake for 30–35 minutes. Remove foil during the last 10 minutes to create a golden cheesy crust.
  6. Allow to cool slightly before serving.
