1 sheet puff pastry (thawed)
4 cups fresh spinach (packed)
8 oz cream cheese (softened)
4 oz feta cheese (crumbled)
1 medium onion (chopped)
2 cloves garlic (minced)
1 large egg (for egg wash)
Salt & pepper to taste
2 tablespoons olive oil
Instructions
Preheat oven to 400°F (200°C).
In a skillet, heat olive oil over medium heat. Sauté onions until translucent, then add garlic and cook until fragrant.
Stir in spinach gradually, cooking until wilted (about 4 minutes). Remove from heat, mix in cream cheese and feta.
Roll out the puff pastry on parchment paper. Spoon the spinach filling onto one half, fold over, and seal edges.
Cut slits on top for steam vents and brush with egg wash.
Bake for 25-30 minutes or until golden brown. Let cool before slicing.
