  • 3 lbs beef chuck roast
  • 4 medium carrots, chopped
  • 1 lb Yukon Gold or red potatoes, quartered
  • 1 medium onion, sliced
  • 4 cloves garlic, whole
  • 1 cup low-sodium beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients and chop carrots and potatoes into uniform pieces.
  2. In a skillet over medium-high heat, sear the chuck roast on all sides until golden brown (about 3-4 minutes per side).
  3. Place sliced onions in the bottom of the slow cooker. Layer carrots and potatoes on top.
  4. Put the seared roast over the vegetables and sprinkle with garlic, thyme, rosemary, salt, and pepper.
  5. Pour beef broth and Worcestershire sauce over everything until just covered.
  6. Cover and cook on low for 8 hours or high for 4 hours until the meat is tender.
