  • 12 jumbo pasta shells
  • 1 cup ricotta cheese
  • 1 cup pumpkin puree (100% pure)
  • ½ cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Boil the pasta shells in salted water until al dente; drain and cool.
  2. In a bowl, mix ricotta, pumpkin puree, Parmesan, Italian seasoning, salt, and pepper until smooth.
  3. Generously fill each shell with the mixture.
  4. Spread half the marinara sauce in a baking dish, place shells seam side up, cover with remaining sauce and Parmesan.
  5. Bake at 375°F (190°C) covered for 25 minutes; uncover and bake for an additional 10 minutes until golden brown.
