Instructions

  1. In a medium bowl, combine pumpkin puree, softened cream cheese, powdered sugar, cinnamon, nutmeg, and vanilla until smooth.
  2. Chill the mixture in the refrigerator for 30 minutes to firm up.
  3. Scoop out small amounts and roll into balls using your hands. Place on a parchment-lined baking sheet.
  4. Melt the chocolate coating in a microwave-safe bowl in 30-second intervals until smooth.
  5. Dip each truffle into the melted chocolate and return to the parchment paper. Sprinkle with chopped pecans if desired.
  6. Chill again for 30 minutes until set.
