  • 3 cups stale crusty bread, torn into pieces
  • 2 cups ripe heirloom or cherry tomatoes, chopped
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup fresh basil leaves, torn
  • 4 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Tear stale bread into bite-sized pieces. Optionally, toast until golden brown.
  2. Chop tomatoes and cucumber into large chunks.
  3. Thinly slice red onion and add to the bowl with chopped vegetables.
  4. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  5. Combine the bread and vegetable mixture in a large bowl. Drizzle with dressing and toss gently.
  6. Add torn basil leaves on top and let sit for 30 minutes before serving.
