  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Prepare a baking sheet.
  2. Toss cubed butternut squash with olive oil, salt, and pepper. Spread evenly on the baking sheet and roast for 25-30 minutes until tender.
  3. In a large skillet over medium heat, add olive oil and minced garlic. Sauté until fragrant, then add spinach until wilted (3-4 minutes).
  4. Cook orzo according to package instructions until al dente; drain, reserving a bit of pasta water.
  5. In the skillet with spinach, stir in heavy cream and Parmesan until melted. Add cooked orzo and roasted squash; mix well. Use reserved pasta water to achieve desired creaminess.
