  • 2 cups fresh spinach
  • 1 cup cherry tomatoes (halved)
  • ½ cup Kalamata olives (pitted and sliced)
  • ½ cup crumbled feta cheese
  • 3 cloves garlic (minced)
  • 4 cups low-sodium chicken broth
  • Juice of 1 lemon
  • 2 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat a large pot over medium-high heat. Add olive oil and diced chicken seasoned with salt and pepper. Cook until browned, about 5-7 minutes.
  2. Stir in minced garlic and cook for another minute until fragrant. Add halved cherry tomatoes and sliced olives; mix well.
  3. Pour in chicken broth and add uncooked orzo. Stir to ensure all pasta is submerged, then bring to a boil.
  4. Reduce heat to low, cover tightly, and simmer for 10-12 minutes until orzo absorbs most liquid.
  5. Remove from heat; fold in fresh spinach until wilted and squeeze lemon juice over the top.
