  • 1 cup quinoa
  • 2 cups water
  • 2 cups fresh spinach, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 1/4 cup Greek yogurt
  • Juice of 1 lemon
  • 1 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • Salt & pepper to taste

Instructions

  1. Rinse quinoa under cold water. In a pot over medium heat, combine quinoa and water; bring to a boil. Reduce heat to low and simmer for 15 minutes until fluffy.
  2. While the quinoa cooks, chop spinach, cherry tomatoes, and cucumber into bite-sized pieces.
  3. In a bowl, whisk together tahini, Greek yogurt, lemon juice, olive oil, garlic powder, salt, and pepper until smooth.
  4. Once quinoa is cooked and slightly cooled, layer it in serving bowls. Top with chopped veggies and chickpeas.
  5. Drizzle tahini yogurt dressing over each bowl and garnish with fresh herbs or sesame seeds if desired.
