  • 1 cup green or brown lentils
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, finely diced
  • 1 ripe avocado, diced
  • 4 cups romaine or butter lettuce, chopped
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • Juice of 1 lime
  • ¼ cup fresh cilantro, chopped

Instructions

  1. Rinse the lentils under cold water and place them in a pot with 3 cups of water. Bring to a boil, reduce heat, and simmer for 20-25 minutes until tender.
  2. Drain excess water from the lentils and stir in cumin and chili powder while warm.
  3. Chop cherry tomatoes, red onion, and dice avocado just before serving.
  4. In a large bowl, combine lentils with tomatoes, onion, avocado, and cilantro. Squeeze lime juice over the mixture.
  5. Create a bed of lettuce on plates or in a bowl and top with the lentil mixture. Serve immediately.
