  • 1 cup granulated sugar (for filling)
  • 4 large fresh eggs
  • 1/2 cup fresh lemon juice (about 23 lemons)
  • Zest of 1 lemon
  • 1 teaspoon baking powder
  • Pinch of salt
  • Powdered sugar for dusting (optional)

Instructions

  1. 1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. 2. In a mixing bowl, combine flour, 1/2 cup granulated sugar, and softened butter. Mix until crumbly, then press firmly into the bottom of the prepared pan.
  3. 3. Bake the crust for about 15 minutes until lightly golden.
  4. 4. In another bowl, whisk together the eggs, remaining sugar, lemon juice, lemon zest, baking powder, and salt until smooth.
  5. 5. Pour the lemon mixture over the warm crust.
