  • 34 boneless, skinless chicken breasts (1.52 lbs)
  • 4 cloves fresh garlic, minced
  • 1 medium onion, diced
  • 1 can (14.5 oz) fire-roasted tomatoes
  • 2 chipotle peppers in adobo sauce, chopped
  • 1 cup low-sodium chicken broth
  • 2 tsp ground cumin
  • 2 tsp dried oregano

Instructions

  1. Dice the onion and mince the garlic.
  2. Select the sauté function on your Instant Pot. Heat oil and sauté onions until translucent (about 5 minutes). Add minced garlic and sauté for another minute.
  3. Place chicken breasts in the pot, sprinkle with cumin and oregano, then add fire-roasted tomatoes and chipotle peppers.
  4. Pour chicken broth over the mixture and stir gently to combine.
  5. Seal the lid of the Instant Pot and cook on high pressure for 10 minutes.
  6. Allow natural pressure release for 5 minutes before manually releasing any remaining pressure. Shred the chicken using forks, then return it to the pot to absorb the sauce.
