  • 3 cloves fresh garlic, minced
  • 1 cup buffalo sauce
  • 2 medium sweet potatoes
  • 4 oz cream cheese, softened
  • 2 green onions, sliced
  • ½ cup sour cream (for serving)

Instructions

  1. Dice chicken into bite-sized pieces and chop garlic and green onions.
  2. In the Instant Pot, combine diced chicken, minced garlic, and half of the buffalo sauce. Cook on high pressure for 10 minutes.
  3. Release pressure using the quick release method. Shred chicken in the pot with two forks.
  4. Stir in cream cheese and remaining buffalo sauce until creamy.
  5. Preheat oven to 400°F (200°C). Poke holes in sweet potatoes and bake for about 45 minutes until soft.
  6. Cut sweet potatoes lengthwise, fluff insides with a fork, and generously fill with buffalo chicken mixture. Top with sour cream and green onions before serving.
