  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 ½ cups whole milk
  • 3 cups fresh spinach, cooked and chopped
  • 1 cup ricotta cheese
  • ½ cup grated Parmesan cheese
  • 2 cups marinara sauce

Instructions

  1. In a bowl, whisk together the flour and eggs until smooth. Gradually add milk to create a thin batter. Let it rest for 30 minutes.
  2. Heat a non-stick skillet over medium heat, lightly greased. Pour in about half a cup of batter, swirling to cover evenly. Cook for 1-2 minutes on each side until golden. Repeat until all batter is used.
  3. In another bowl, mix sautéed spinach, ricotta cheese, Parmesan, salt, pepper, and herbs if desired.
  4. Spoon filling onto one end of each crepe and roll tightly, placing seam-side down in a greased baking dish.
  5. Cover the rolls with marinara sauce and sprinkle extra Parmesan on top.
  6. Preheat the oven to 375°F (190°C) and bake for 25 minutes covered with foil; uncover for the last 5 minutes to brown.
