  • 2 lobster tails (68 oz each)
  • 4 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 tsp paprika (smoked for extra flavor)
  • Salt & pepper to taste
  • Fresh parsley (chopped, for garnish)

Instructions

  1. Preheat your grill to medium-high heat (350°F/175°C).
  2. Using kitchen shears, carefully split the lobster tails in half lengthwise, leaving the shell intact.
  3. In a small saucepan over low heat, melt the unsalted butter. Stir in minced garlic, lemon juice, paprika, salt, and pepper; simmer until fragrant.
  4. Place the lobster tails shell-side down on the grill and brush generously with the garlic butter mixture.
  5. Grill for 6-8 minutes until opaque and slightly charred. Baste every couple of minutes with remaining butter.
  6. Remove from grill, garnish with fresh parsley, and serve immediately with lemon wedges.
