  • 3/4 cup brown sugar, packed
  • 1/2 cup unsalted butter, softened

  • 1 cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and grease a muffin tin.
  2. In a bowl, whisk together flour, baking soda, ginger, cinnamon, and salt. In another bowl, cream butter and brown sugar until fluffy. Beat in eggs one at a time.
  3. Gradually add dry ingredients to the butter mixture until combined.
  4. Scoop two tablespoons of dough into each muffin cup and press down gently to form shallow cups.
  5. Bake for 10-12 minutes or until golden brown. Cool for five minutes before transferring to wire racks.
  6. Whip together cream cheese and powdered sugar until smooth; fill the cooled cookie cups with the mixture.
  7. Top with festive sprinkles or crushed candy canes before serving.
