Scale
  • 4 cups all-purpose flour
  • 2 tsp active dry yeast
  • 1 ½ cups warm water (110°F/43°C)
  • ¼ cup extra virgin olive oil
  • 2 tsp salt
  • 4 cloves fresh garlic, minced
  • 2 tbsp fresh rosemary or thyme, chopped

Instructions

  1. In a large mixing bowl, combine warm water and yeast. Let sit until frothy, about 5 minutes.
  2. Add flour, salt, and 2 tablespoons of olive oil. Mix until combined.
  3. Knead dough on a floured surface for 8–10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with plastic wrap, and let rise in a warm place until doubled in size (about 1 hour).
  5. Punch down the dough gently and transfer to a greased baking sheet; stretch into a rectangle.
  6. Drizzle remaining olive oil over the dough and create dimples with your fingers. Sprinkle with garlic and herbs.
  7. Preheat oven to 425°F (220°C) and bake for 20–25 minutes or until golden brown.
