  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ⅔ cup granulated sugar
  • 16 oz cream cheese, softened
  • 3 large eggs, room temperature
  • 1 cup eggnog (store-bought or homemade)
  • ½ tsp freshly grated nutmeg
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  2. For the crust, mix graham cracker crumbs with melted butter until combined. Press into the bottom of the prepared pan.
  3. In a separate bowl, beat softened cream cheese until smooth. Gradually add sugar and mix until fluffy. Add eggs one at a time, blending well after each addition before incorporating eggnog.
  4. Stir in nutmeg and vanilla extract until smooth.
  5. Pour the filling over the crust and bake for 30-35 minutes until set around edges but slightly jiggly in the center.
  6. Cool at room temperature for one hour, then refrigerate for at least two hours before cutting into squares.
