3–4 boneless, skinless chicken breasts
1 cup seasoned breadcrumbs
8 oz fresh mozzarella cheese, sliced
1 cup marinara sauce
¼ cup freshly grated Parmesan cheese
¼ cup fresh basil leaves, chopped
2 tbsp extra virgin olive oil
Salt and pepper to taste
Instructions
Preheat oven to 400°F (200°C). Pound chicken breasts between plastic wrap until ½ inch thick for even cooking.
Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with seasoned breadcrumbs mixed with salt and pepper.
Bread chicken by dipping each piece in flour, then egg, followed by breadcrumbs.
Heat olive oil in a skillet over medium heat. Sear chicken until golden brown on both sides (about 3-4 minutes per side) and transfer to a baking dish.
Spoon marinara sauce over the chicken and top with mozzarella and Parmesan cheese.
Bake for 15-20 minutes until cheese is bubbly and the internal temperature reaches 165°F (74°C).
