- 3–4 boneless, skinless chicken breasts
- 1 cup seasoned breadcrumbs
- 8 oz fresh mozzarella cheese, sliced
- 1 cup marinara sauce
- ¼ cup freshly grated Parmesan cheese
- ¼ cup fresh basil leaves, chopped
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Pound chicken breasts between plastic wrap until ½ inch thick for even cooking.
- Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with seasoned breadcrumbs mixed with salt and pepper.
- Bread chicken by dipping each piece in flour, then egg, followed by breadcrumbs.
- Heat olive oil in a skillet over medium heat. Sear chicken until golden brown on both sides (about 3-4 minutes per side) and transfer to a baking dish.
- Spoon marinara sauce over the chicken and top with mozzarella and Parmesan cheese.
- Bake for 15-20 minutes until cheese is bubbly and the internal temperature reaches 165°F (74°C).
