  • 4 boneless, skinless chicken breasts
  • 1 cup plain Greek yogurt
  • 1 medium cucumber, diced
  • 3 garlic cloves, minced
  • 2 tsp fresh dill weed
  • 2 tbsp lemon juice
  • 1 cup long-grain basmati rice
  • 2 cups chicken broth or water
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly grease a large baking dish.
  2. Arrange the chicken breasts evenly at the bottom of the dish.
  3. In a bowl, mix Greek yogurt, garlic, cucumber, dill weed, lemon juice, salt, and pepper to create the tzatziki sauce.
  4. Spread half of the tzatziki mixture over the chicken breasts.
  5. Combine rice with broth or water in another bowl; pour around the chicken in the dish.
  6. Cover tightly with aluminum foil and bake for 25-30 minutes until chicken is cooked through (165°F internal temperature) and rice is fluffy.
  7. Drizzle remaining tzatziki sauce over the chicken before serving.
