  • 1 lb lean ground beef or turkey
  • 1 cup canned pumpkin puree
  • 1 can (15 oz) black beans, rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 2 cups low-sodium vegetable broth
  • Salt and pepper to taste
  • Optional: sour cream and tortilla chips for serving

Instructions

  1. Chop the onion and mince the garlic.
  2. In a skillet, brown the ground meat over medium heat until fully cooked; drain excess fat.
  3. Transfer the meat to the crockpot and add onions, garlic, pumpkin puree, diced tomatoes, black beans, chili powder, cumin, salt, and pepper.
  4. Pour in vegetable broth gradually until desired thickness is achieved.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Serve hot topped with sour cream and tortilla chips.
